Readers familiar with our previous episodes will also know that we’ve taken the opportunity, while our technicians are on the road across the globe, to highlight the products processed by the machines we service. This gives us a chance to share intriguing insights and explore the rich culture of the Food & Beverage industry, which we have been part of for over 70 years.

But today’s episode is a little different. This time, we’re not heading abroad—we’re staying in Italy.

The intervention took place from mid-August onwards (yes, ZACMI never takes a break!), assisting a client preparing for their tomato sauce production season.

So, this time we won’t be diving into the fascinating history and anecdotes of this beloved vegetable, as we’ve already done that in another article brimming with quirky facts and lesser-known stories (Tomato Sauce: A Tale of Alleged Poisonings and Global Success).

In addition, on our LinkedIn page (you’re following us, right?), we’ve been collaborating with a client to explore every stage of the tomato sauce production process, from the field (cultivation, selection, transport) to the jar on the supermarket shelf (production, hygiene standards, labelling).

So this article may be shorter than usual, but it will still give a clear picture of what it means to rely on ZACMI and join our family of satisfied clients.

… and We’ve Had Everything Under Control All Along


We had already sent a team of technicians to the company’s site earlier this year, in winter. It’s standard procedure to carry out scheduled maintenance in the off-season, well in advance of production. This ensures that the machinery is fine-tuned, worn parts are replaced, and all components are optimised, with plenty of time to make adjustments if necessary.

Thanks to this careful preparation, the equipment was ready for an immediate start when the summer production season arrived. However, the client still wanted the reassurance of having one of our experts on hand. That’s where our specialist came in.

Guiding You Through the Start-Up Process …


Indeed, the machinery had been idle since the previous season, and although it had undergone scheduled maintenance during winter, the company felt more confident having a ZACMI technician on-site for the start-up.

So, our specialist technician went to the client’s premises and worked closely with their team to manage the start-up phase — a moment that can be particularly sensitive for some businesses. With everything running smoothly, the production got underway seamlessly, thanks also to a brief on-site refresher training for the operators.

This training even included simulations of potential faults or malfunctions, ensuring that the company’s staff were fully equipped to handle any eventualities independently.

With clear guidance and expert supervision from our specialist, the process was completed quickly and to the client’s full satisfaction, with the production starting without a hitch.
